Becky Alexander lives in St Albans, is a food writer and book editor and the food columnist for the local paper, The Herts Advertiser.
The Green Lunch Box is a beautiful, inspirational book full of easy lunch ideas. Everything in the book is veggie/vegan, so whether you are looking to eat less meat this year, or just need some new ideas, this book has plenty for you in there.
Whether you eat lunch at home or at work, it can be easy to get into the habit of eating the same things on rotation. All those little plastic pots of salad or sandwich packets aren’t great for the planet either, so making your own a few times a week can help. There are loads of ideas for eating seasonally, loving your leftovers, batch prep, and fridge foraging, for when you need lunch in a hurry.
The Green Lunch Box has ideas for soups such as butternut squash and blood orange and spicy black bean with dark chocolate. There are salads such as black lentil with red pepper and blitzed olives, and loads of sandwich ideas including no-sesame hummus.
